Warm Black Beans on a Cold Winter's Night!

Here's all you'll need:

2 or 3 sweet potatoes
2 Tablespoons extra virgin Olive oil
1 small chopped onion
1 Tablespoon minced garlic or 1/2 teaspoon garlic powder
1/4 cup red wine vinegar
1/4 cup water
2 16 ounce cans black beans ( rinsed well and drained )
1/2 teaspoon oregano

Easy to make:

Rinse and scrub the sweet potaotes.

Cut the sweet potatoes into 1/4 or 1/2 inch cubes. ( Or 1/4 inch slices )

Peel and chop the onion.

Heat the oil in a large pan.

Add the onion, garlic powder, and sweet potatoes.

Cook for 6 minutes on medium heat.

Add vinegar and water. Cook on low-medium heat until the sweet potatoes are tender, about 10 minutes.

Add the black beans and oregano. Cook until the beans are heated through.
