Easy Chili for a cold Winter day




The All-Clad Copper Core 5 1/2 Quart Dutch Oven is ideal for making this delicious chili. Or your favorite soup or stew. I like to make plenty of this tasty chili in case guests stop buy or even to put some in the freezer for later.

What you'll need:
2 cans of rotel tomatoes ( or one regular tomatoes and one chili fixins! )
2 cans of chili beans ( try one mild and one medium! )
two cans of inexpensive chili. ( I like Stag, or Hormel, or even a store brand )
1 small red onion diced
1 green pepper diced.
2 cloves of garlic diced
a package of 5 hotlinks - chopped ( your favorite. The links are optional

Let's get cooking

Pour a few tablespoons of Olive oil in your favorite stockpot or dutch oven from your best stainless steel cookware
Heat on medium for a few seconds. swirl the olive oil around the bottom of your pot.
Toss in the diced garlic.
Add the Rotel tomatoes, diced onion, and green pepper.
Then add in the chili beans.
And then the chopped up hot links if you like.
And lastly, add the canned chili.

On Medium heat bring to a boil. Turn the heat way down and simmer for a couple hours covered.

When you serve you might enjoy adding some shredded cheese.

This is a warm and delicious meal anytime. We love it on Saturday afternoons while watching basketball.
